Best Vanilla Protein Powder Pancakes

I really struggle to mix it up and find appealing optiond that are quick and relatively healthy for breakfast every day.

If I had it my way I would be living in Italy surviving off breakfast cake and coffee every single day.

These vanilla protein powder pancakes are very quick and easy to prepare and fry. They dont exactly taste like a regular pancakes, there is a banana in the mix so there will always be a subtle banana flavour in them.

My toddler tried them and loved them and he really isnt fussed about regular pancakes.

Best Vanilla Protein Powder Pancakes
You’ll Need;
1 medium soft banana
2 Eggs
1/2tsp baking powder
2 scoops Protein powder (I chose vanilla flavour and find it works very well with the banana flavour)
1 tsp coconut oil for frying

Method;
Mash up the banana until fairly smooth, add the eggs and beat them in. Mix in the protein powder and baking powder until completely combined.
Melt the coconut oil in a frying pan on a medium heat.
Use 2 teaspoons of mixture per pancake. Its quite a thick and heavy mixture so smooth it out into a circular shape in the frying pan. Frying for roughly 30-60 secs on each side.

Top them with whatever you like, I just have a little bit of butter.
